To preserve the edge, we strictly recommend using Japanese whetstones. Avoid pull-through sharpeners or honing steels, which can chip the hard steel. Always hand wash and dry your knives immediately after use; never place them in a dishwasher.
What is the difference between Stainless Steel and High-Carbon Steel?
High-carbon steel (like Blue or White Steel) can achieve a sharper edge and is easier to resharpen but will rust if not kept dry. Stainless steel contains chromium to prevent rust, making it more convenient for home cooks while still offering excellent performance.
